FOOD THAT TRAVELS: GLOBAL STORIES OF OUR SUMMER MENU
The sun dances across the canals, bicycles flood the cobbled streets, and something in the air shifts.
It is summer in Utrecht, and with it comes the irresistible pull toward cosy dining. At BlendHouse, we take this summer feeling and run with it…across continents.
“Summer isn’t just a season,” says Nana, the co-owner of this Indian fusion restaurant in Utrecht, “it’s a celebration of vibrant colours, bold flavours, and the stories that food tells across cultures and generations.”
With a new summer fusion menu this season, BlendHouse brings to life this philosophy reimagining the favourites of Desi cuisine with seasonal dishes and global flavours. Hungry? You will be.
From royal Indian kitchens to Norwegian coasts and a mango detour that promises pure tropical freshness, this is food that travels! Journey with us to know what and where to eat in Utrecht this summer.
Royalty Meets Greek Comfort
Let’s start regal, shall we? The Lamb Galouti Kebab at our Indian fusion restaurant is history and technique served at your table.
Born in the Mughal courts and known for its melt-in-your-mouth feel, this is one of our finest dishes, loved by our chefs and owners alike.
Think New Zealand lamb, slow-marinated in pineapple, green papaya, and more than 15 aromatic spices. The result? A kebab so tender, it practically disappears in your mouth, leaving behind Indian flavours with French pâté-level smoothness.
You may wonder how this royal delight took centre stage on our summer menu. Well, hear it from the team themselves, “What drew us to include it wasn’t just its deep cultural heritage, but the incredible texture and versatility.”
Served with a swirl of Greek tzatziki and saffron-infused naan, this recipe captures exactly what BlendHouse stands for: creative Indian fusion that respects tradition while celebrating innovation. Reserve your table now for a unique summer dining experience in the Netherlands.
From South India to Norway
Next up on our summer menu is the Banana Leaf Fish with Lemon Rice.
Inspired by South India’s coastal kitchen, this is a nod to Kerala’s Meen Pollichathu, where fish is marinated and steamed to perfection inside a plantain leaf.
We start with a Norwegian cod. Its buttery texture absorbs our in-house spice mix like a dream. This is then tucked into a banana leaf and slow-cooked until the aromas begin their gentle tease.
We serve it over a bed of lemon rice, a classic of Indian cuisine, known for its summery, turmeric-laced brightness.

Reimagining the Classic Potato
Fried potatoes never go out of style. Now, pair it with the richness of spiced vegetables, the sweetness of raisins, and a silky coconut curry. That is a postcard from all the places you’ve ever eaten something unforgettable.
We call this beloved offering of our summer menu the Firdausi Potatoes Rice Bowl. Drawing its name from the Persian word for paradise, this dish is exactly that, heaven served on a plate.
Buttery Delights & Childhood Memories
We present to you the Butter Chicken Rice Bowl. No Indian menu—summer or otherwise—is complete without this crowd magnet. But at BlendHouse, this recipe is more than just a favourite.
Passed down through generations, the secret to this meal comes straight from the childhood stories of our co-owner Abhi.
Growing up in India, some of his fondest childhood memories are of watching his grandmother prepare this creamy wonder from scratch in her humble home kitchen. She would start by slow-cooking tomatoes, onions, and spices to create a deep, flavourful base. The chicken was marinated overnight in yoghurt and turmeric. Later, it was cooked in a traditional clay oven.
When Abhi moved to the Netherlands and began shaping BlendHouse as an Indian fusion restaurant in Utrecht, he brought along the recipe with the memory of his grandmother’s warmth, hospitality, and care.
This summer, we’re proud to serve it, honouring his heritage, heart, and home.
Sweet Mango Mischief
What’s summer without mangoes? At our Indian fusion restaurant, we go all in! Shining brighter than sun-kissed days, Alphonso mango is the star of our menu, showing up in dishes both expected and delightfully surprising. Find its magic in our Mango Sorbet or Mango Lassi Martini. For those who love to explore, taste the golden fruit’s punch in our Mexican-inspired Mango Salsa, served with spinach-and-corn Pashto Koftas.
Known as the king of mangoes, Alphonso steals the show this season. And honestly, we let it. Come by to see the star of the season shine. Reserve now!
Italian Summer in a Glass
When you think summer, you think Aperol Spritz. The perfect sip to match the sunshine and your sweet laughter.
With varying recipes across the world, this drink has a long history of experimentation. Since its very first pour in 1919, this orange-hued delight has become Italy’s go-to for sun-soaked afternoons.
At BlendHouse, we’ve brought the spirit of Europe’s carefree days to Utrecht. Sparkling, citrusy, and pleasantly bitter, this cocktail is a refreshing pause this season, echoing the cooling sips that define Indian summers.

A Sweet Paan-Kissed Goodbye
Meals in India often end with paan or betel leaf served as a gesture of hospitality. This is a feast finale meant to linger.
At BlendHouse, we’ve turned this custom into a summer cocktail, infused with Goan coastal ingredients like kokum and coconut.
Partake in our love letter to Indian streetside romance, kissed with the sweetness of paan and layered with nostalgia. Reserve your table today!
One Table, A Thousand Stories
At BlendHouse, our concept of ‘food that travels’ is about more than global recipes. Every creation in our summer menu reflects our belief that flavours grow richer when they cross borders. Whether it’s Greek yoghurt in a Mughlai kebab or Indian spices in a Scandinavian delicacy, we love our roots while embracing the world. As our co-founder Nana puts it,
“Fusion, for us, means honouring where a dish comes from while daring to take it somewhere new. And this season, we invite you to taste that journey.”
