Glossary:

Lassi- This is a yoghurt-based drink popular in India. It can be flavoured or simply drunk as is. The varieties include a sweet version, including fruits, and the salted version includes spices.

Masala- Refers to a spice mix. In tea, this would include cardamom, cinnamon and ginger.

Kulfi- A milk-based frozen treat infused with saffron. The name literally means “covered cup”, referring to the shape of the mould in which the ice cream is made.

Paan- Betel leaf along with areca nuts and slaked lime. A variation includes meetha or sweet paan, which includes desiccated coconut and gulkand.

Gulkand- An Ayurvedic sweet preserve made of rose petals and sugar.
