INTRODUCING BLENDHOUSE’S NEW MENU: INDIAN FUSION FOODS FOR COSY UTRECHT EVENINGS.
The arrival of winters in India is a sensory experience. The air turns cooler, markets overflow with fresh harvests like sweet pumpkins, earthy yams, succulent guavas, and warming spices start sneaking into every dish. It’s the time for rich curries and sweets that taste like a hug. But what if these seasonal Indian flavours met Western classics in a delicious culture clash?
“This New Menu at BlendHouse is inspired by the magical transition from warm summer evenings to crisp nights in Utrecht. At our Indian fusion restaurant, we wanted to capture the essence of comfort, warmth, and colours of the changing seasons.”
~ Nana, Co-founder of BlendHouse
Think masala Indo pork ribs, mango sorbet with coconut pudding, or even tandoori sushi. Yep, we just got a lot more flavourful. Let’s dig into the best of India’s culinary bounty and dream up the fusion dishes you didn’t know you needed with our New Menu.
A Harvest of Colour and Promise
As the days grow shorter and the rains retreat, something remarkable begins to stir across Indian markets. They begin to flood with fresh vegetables, fruits, and new flavours become store-side favourites.
The BlendHouse Greens Platter is an ode to this abundance. Think ruby-like beetroot transformed into smoky kebabs, avocado tikkas grilled to perfection, and yoghurt kebabs that melt softly with each bite. Served alongside warm naan and a jewel-toned beetroot hummus, this dish nourishes, delights, and reflects the richness of desi cuisine.

Warming Stories of Spices and Tandoors
Do you remember the smell of your favourite childhood dish being cooked?
For many of us, the memory of food is linked not only with taste but also with scent. And few things are more nostalgic than the unmistakable smokiness of a tandoor at work. That first whiff of marinated meat or vegetables reaching the blazing heat and the sizzle, all remain a cherished memory, especially for those away from home.
Traditionally, the tandoor is a clay oven, sunken into the ground. It’s where flatbreads puff up, where kebabs take on their iconic crust, and where warmth, both literal and emotional, is shared. At our Indian restaurant in Utrecht, we give it a contemporary twist, letting the tandoor tell new stories.
Introducing our Tandoori Chicken Sushi. A playful reimagination of two culinary worlds and Asian fusion flavours. This dish features delicate sushi rolls infused with the charred essence of tandoori spices, smoky on the outside, soft and savoury within. It’s a bite that challenges assumptions yet somehow feels entirely familiar.
Meals that Warm from Within
As the days grow cooler in Utrecht, the cravings for depth and dishes that wrap around you like a soft shawl on a breezy evening come alive. In Indian cuisine, this warmth doesn’t come from temperature alone. It comes from layered spices, slow-cooked bases, and ingredients that are soothing.
“India has a deep tradition of great dishes that are apt for the approaching winter. Think of dal tadka, rich slow-cooked curries, and breads like naan, which pair perfectly with Utrecht’s cooler evenings,” say our founders. They further explain, “For this menu, we’ve turned to classic Indian comfort food with a modern twist, including a sweet corn soup shot served before every fixed course, blending Dutch corn with Indian spices.”
At BlendHouse, our lamb chops are a quiet triumph. The meat, sourced from Norway, is succulent, spice-kissed, and seared to perfection. Nestled beside golden roasted baby potatoes and a whisper of pistachios, it’s a dish that speaks of slow weekends, shared stories, and the kind of comfort that only hearty meals deliver.
Another dish to spotlight is the Boaty Eggplant. The sliced vegetable, gently roasted and layered with bold masalas, floats above a bed of flavour, tender and packed with umami. It’s a dish that surprises you with its complexity yet stays grounded in tradition.
An Affair of Flavour and Feasts
“As the days grow cooler, we’re always reminded of festivities back home in India, a time filled with golden lights, sweets, and family gatherings. We wanted to bring that same spirit to Utrecht,” says Abhi, one of our co-founders.
During this season, Diwali, Navratri, and more begin to fill Indian homes with reunions, rituals and, of course, indulgence.
At BlendHouse, we’ve spun that festive enthusiasm into desserts that surprise, while also staying true to our roots. Our Mango Sorbet with Coconut Pudding is a tropical reinterpretation of a kheer-like silkiness. For those looking for nostalgia in every spoonful, this dish is a soulful harmony of fruity flavours, laced with creamy richness that lingers long after the sweetness fades.
